Caldo de carne de buey.

Hervir a fuego lento es la mejor manera de ablandar trozos grandes de carne, pero como el buey hervido y todos los cortes con que se prepara el rico caldo, necesitan una carne de calidad media. Si lo que se quiere es conservar el sabor de la carne, sumérjala en agua hirviendo sin sal. Si lo que se quiere es un caldo sabroso a expensas de la carne, se ha de poner esta en agua fría, salada, y llevarla lentamente al punto de ebullición.
Una vez que el liquido esté hirviendo baje el fuego hasta que hierva lo más lentamente posible. Si la carne se ve sometida a un calor intenso de la ebullición fuerte, el tejido colectivo  gelatinoso se disolverá y la carne quedará seca y dura, en tanto que una ebullición  lenta mantendrá la carne suculenta y tierna.
Cuando se haya terminado de espumar el caldo se añadirá sal, verduras y hierbas aromáticas para dar sabor, se dejará hervir durante 20 minutos por cada 1/2 kg. de carne.

Spanish Salmorejo Soup

Some of you might mistakenly think this Spanish salmorejo to be a classic gazpacho but it’s not. Before going to Sevilla I had never heard of this delicious cold tomato soup version either. This one (originally from Cordoba) has some things in common with gazpacho, that’s for sure. First of all: it’s Spanish. Secondly: raw tomatoes are the main ingredient. And last but no least: salmorejo is served cold as a soup slash appetizer. That’s it. No need to add raw cucumber, celery or shallots.
One important ingredient makes it distinctively different from gazpacho: the white bread. This gives it a much thicker consistency and creamier texture without adding dairy such as butter, milk or cream. Gazpacho can easily be served as an appetizing drink whereas this soup is best eaten with a spoon because of its thicker consistency and the traditional garnish on top: chopped serrano ham and crumbled hard-boiled egg.
You can make half of the soup a day in advance: pour the blended tomatoes, garlic, bread and olive oil through a sieve and chill the drained soup in the fridge. You just have to add vinegar, pepper and salt to taste the day itself. Easy!
Spanish Salmorejo Soup

Salmorejo: a refreshing Spanish tomato soup served cold as a soup or appetizer.

Ingredients
  • 1 lb (450 g) very ripe tomatoes
  • 1 tsp garlic, chopped
  • 3,5 oz (100 g) white bread, crusts removed
  • ⅓ cup (80 ml) red wine vinegar
  • 1 hard-boiled egg, crumbled
  • 2 slices Serrano ham, chopped
  • ⅓ cup (65 ml) olive oil
  • pepper
  • salt

Instructions
  1. Soak the white bread in a little water for 5 minutes.

  1. Drain the bread and squeeze it out. Roughly chop the ripe tomatoes. Add them together with the chopped garlic and the white bread to a clean blender.
  1. Pulse into a fine mixture. Add the the olive oil.
    1. Pulse well again into a silky smooth reddish soup. Place a fine sieve over a large pan or bowl and pour in the tomato soup.
      1. Stir the soup in the sieve well using a spatula or a spoon until you end up with a coarse pulp.
        1. Discard this tomato and bread pulp. Add half of the vinegar and a little pepper and salt to the tomato soup.
          1. Stir well. Check the seasoning and little by little add extra vinegar, pepper or salt to taste if necessary. Transfer the soup to a glass jug and chill it in the fridge for at least 30 minutes. Stir the chilled soup well and pour it into bowls, deep plates or glasses.
            1. Garnish with the crumbled hard-boiled egg, the chopped Serrano ham and a few extra drops of olive oil right before serving.

Conejo al ajo cabañil
Hay formas mas sanas de comerse un conejo pero ... disfrútalo.

No he visto jamas un vídeo de recetas mejor realizado explicado y escueto que este, mis mas sinceras felicitaciones.

Papas arrugadas con mojópicon


 400 gr de patatas pequeñas
 100 gr de sal gorda
 4 ajos

 2 cucharadas de pimentón dulce
 1 guindilla
 1 cucharada de cominos
 1 pizca de sal
 4 cucharadas soperas de vinagre
 100 cc de aceite de oliva

Lavamos muy bien las patatas, las colocamos con la piel en una cazuela con la mitad de la sal gorda y con agua (hasta cubrirlas). Ponemos al fuego y las dejamos cocer unos 20 minutos (el tiempo dependerá del tamaño y del tipo de patata). Cuando estén cocidas, quitamos el agua y secamos las patatas. Después las volvemos a poner en la cazuela al fuego con la otra mitad de la sal (sin nada de agua). Vamos dándoles vueltas hasta que se queden arrugadas. Las sacamos y reservamos.
Ahora hacemos la salsa. Para ello, metemos todos los ingredientes en la batidora hasta conseguir una salsa bien triturada y ligada.
